Apple Fritters

Serves 4

Time 30 minutes

Ingredients

For the Fritters

3 apples, peeled, cored and cut into chunks

1 cup self raising flour

⅓ cup sugar

1 tsp baking powder

1 cup milk

2-3 tbsp maple syrup

2 eggs

 

2 lemons, juiced

1 cup icing sugar

 

2 cups vegetable oil, for frying

Method

In a large bowl whisk together the flour, sugar, and baking powder. Add half the milk, maple syrup, eggs and whisk until a thick and smooth batter forms. Add remaining milk if necessary. Add the apples to the batter and fold through gently to combine. 

Slowly heat the 2 cups vegetable oil in a deep cast iron skillet or prepare the deep fat fryer. Set a plate next to your fryer with a thick layer of paper towels. Check if your oil is hot enough by dropping a small amount of batter into it. If the batter browns and quickly floats to the surface you’re ready to go! Drop the fritters in the oil with a ladle. When brown and crispy on the outside remove from the oil and drain on the paper towel.

Mix together the lemon juice and icing sugar for the glaze. Drizzle over the fritters and enjoy.
