Apple & Walnut Baked Oatmeal

Ingredients
2 cups oats
2 tbsp ground flaxseeds
1 cup walnuts, chopped
1 tsp ground cinnamon
¼ tsp ground ginger
¼ tsp ground nutmeg
1 large pinch salt
1 apple, diced
½ cup stewed apple sauce (homemade)
½ cup oat milk
2 eggs
¼ cup maple syrup
1 tsp vanilla paste
¼ tsp almond extract
¼ cup coconut oil, melted
To serve
Vegan ice cream
Method
Preheat the oven to 180C.
In a large bowl mix oats, flaxseeds, walnuts, cinnamon, ginger, nutmeg and salt.
Add apples, stewed apple, oat milk, eggs, maple syrup, vanilla, almond extract and coconut oil.
Pour the mixture evenly into coconut oil greased baking dish and bake for 30-40 minutes or until golden brown.
Sprinkle top with cinnamon, nutmeg and salt.
Serve warm with vegan ice cream and extra nuts.
