Bacon, Cheese & Sweet Potato Fritters
Serves 6

Ingredients
2 cups self-raising flour
3 eggs
1 tsp smoked paprika
1 cup milk
¼ cup polenta
2 rashers bacon, thinly sliced
½ cup breadcrumbs
1 cup sweet potatoes, grated
1 cup cheddar cheese, grated
1 bunch coriander, finely chopped
1 bunch parsley, finely chopped
1 bunch chives, finely chopped
1 long red chilli, coarsely chopped
1L vegetable oil, for frying
To serve
Mint
Spring onion
Lime
Iceberg lettuce cups
Method
To a large mixing bowl, add the flour and crack the eggs in. Whisk to break up the eggs slightly, then add the paprika and the milk. Whisk again to combine with the flour. Add the polenta, bacon, cheese and sweet potato. Fold through with the breadcrumbs, then mix in the herbs and chilli.
Heat the oil up, and fry spoonfuls of the mixture in it until golden. Don’t overload the oil, so frying 5-6 at a time is best.
