Baked Feta, Honey & Mint

Serves 6

Time 30 minutes

Ingredients

3 tbsp extra virgin olive oil
1 large block firm feta
¼ cup honey
½ cup mixed olives, halved
On the vine cherry tomatoes
1 lemon, cut into wedges
1 clove garlic, microplaned
1 sprig mint

To serve
Pita bread

Method

Preheat oven to 180°C.
Grease small casserole dish.
Place block of feta on the dish and brush with extra virgin olive oil.
Fill gaps with tomatoes, olives and lemon wedges.
Bake for 10-12 minutes.
Remove from oven and drizzle over honey and grill until feta starts to go golden brown.
Drizzle with extra honey and sprinkle with mint.
Serve with pita.
