Baked Goat Cheese Dip with Homemade Crostini

Ingredients
Goat Cheese Dip
500g goats cheese
500g cream cheese, at room temperature
200g parmesan cheese
100g mozzarella
2 cloves garlic, microplaned
Extra virgin olive oil
½ red onion, roughly chopped
1 bunch young thyme, roughly chopped
1 bunch dill, roughly chopped
1 bunch garlic chives, roughly chopped
4 spring onions, roughly chopped
Salt & pepper
1 baguette, cut into slices
1-2 tbsp extra virgin olive oil
Salt & pepper
Method
Preheat oven to 180ºC.
In a food processor, combine all of the ingredients for the goat cheese dip. Process until smooth.
Spread cheese mixture into baking dish and bake in the oven for 15-20 minutes until golden and bubbly.
Drizzle on olive oil and top with fresh herbs and pepper.
Spread the bread slices onto a tray and drizzle with olive oil and salt & pepper, bake in the oven until golden and crispy and serve together with the dip.
