Banana & Oat Muffins

Serves make 9 muffins

Time 30 minutes

Ingredients

1 cup oats

1 cup almond meal 

1 tsp baking powder

½ cup desiccated coconut

2 eggs

2 bananas, mashed

⅓ cup maple syrup or honey 

½ cup Greek yoghurt

1 tsp extra virgin olive oil 

Method

Preheat the oven to 190°C.

In a blender place the oats, almond meal, baking powder blitz until smooth.

In a separate large bowl, mash the bananas until smooth and mix through the blender ingredients, syrup, coconut, egg, and yoghurt.

Stir well to combine.

Place into a muffin tray pregreased with olive oil and sprinkle additional oats on top. 

Bake for 20-25 minutes and enjoy.
