Beer, Chilli and Peanut Brittle

Serves 8 as a snack

Time 25 minutes

Ingredients

½ cup raw sugar

½ can of beer

1 cup raw unsalted peanuts

¼ cup smooth peanut butter

1 tsp dried chilli flakes

1 tsp sea salt

Method

Preheat oven to 180°C. Line a large baking tray with baking paper and set aside.

In a saucepan, add the beer and sugar and cook over medium heat, stirring to dissolve sugar. Simmer for 5 minutes until reduced by half and a syrup consistency has been reached.

Add peanuts, peanut butter and chilli flakes. Cook, stirring for 3 minutes until the mix has thickened. Pour onto a baking tray and spread out evenly. 

Cook in the oven for 10-12 minutes.

Remove from the oven and sprinkle salt flakes while still hot. 

Allow it to cool before breaking into shards.
