Breakfast Nachos
Serves 4
Time 20 minutes
Ingredients
1 tbsp extra virgin olive oil
2 cloves garlic, grated
1 bag raw spinach
1 cup mixed cherry tomatoes, halved
4 eggs
1 tsp smoked paprika
Salt & pepper
To serve
2 spring onions, sliced
½ jalapeño, seeds removed, finely sliced
½ avocado, sliced
1 lime, juice
Hot sauce, to taste
1 packet blue corn tortilla chips
Method
Add extra virgin olive oil, garlic, spinach and tomatoes to a fry pan over low heat, stir and allow the spinach to wilt. Create 4 wells in the mixture and crack an egg into each of the wells. Cover with a lid and cook until the eggs are set.
Once cooked, place tortilla chips around the pan, top with spring onions, jalapeño, avocado, lime and hot sauce.
