Brunch Lasagna

Serves 6-8

Ingredients

12 slices bread, thickly sliced 

300g swiss cheese, sliced

6 thick slices ham

300g bacon, thinly sliced

100g salami, sliced

200g polish sausage 

500g mozzarella

12 eggs

500ml milk

300ml cream

4 cups corn flakes

300g butter

Salt & pepper

Method

Preheat the oven to 160°C.

Whisk eggs, cream, milk and a pinch of salt until combined. 

Layer 6 slices bread button of the tray. Drizzle over melted butter. Layer ham over the bread. Tear mozzarella over, followed by polish sausage, and salami. Add another layer of bread, and drizzle over more butter. Add layers of swiss cheese, and gently pour the egg mixture over. 

Mix bacon pieces through the corn flakes and add over the cheese to form a crunchy layer on top.

Place in the oven and bake for 45-55 minutes. If the cornflakes become too dark, cover with some foil.
