Bucatini Amatriciana

Serves 5

Time 15 minutes

Ingredients

500g tubular spaghetti  

300g guanciale, diced

4 tbsp extra virgin olive oil

1 jar of passata

2 tsp chilli flakes

200g pecorino, grated

Salt and pepper, to taste 

Method

Add pasta and cook as per packet instructions in a pot of boiling salted water.

Meanwhile, heat a pan on low, and add the guanciale. Cook for 5 minutes or until guanciale is crispy and all fat has rendered down.

Add passata, chilli and 1 cup of pasta water to pan and bring to the boil. Simmer and cook for 8 minutes, add salt and pepper to taste. Strain pasta and add to pan. 

Turn off heat, mix and serve with a drizzle of extra virgin olive oil and pecorino over the top.
