Chilli Fries Sin Carne

Ingredients
Sweet Potato Fries
2 sweet potatoes, peeled and cut into fry shape
1 tbsp extra virgin olive oil
1 tsp paprika
Salt & pepper
Chilli
1 tsp extra virgin olive oil
1 red onion, diced
2 garlic cloves, diced
1 jalapeno, diced
200g plant based mince
1 cup corn
1 x (400g) can chopped tomatoes
¼ tsp cumin
¼ tsp paprika
¼ tsp cayenne pepper
¼ cup pickled jalapenos
1 cup cheddar cheese
To serve
Sour cream
Coriander
Avocado
Paprika
Method
Preheat the oven to 200C.
Place sweet potato fries on a lined baking tray, coat in extra virgin olive oil, salt, pepper and paprika. Roast for 50-60 minutes, stirring occasionally, or until crispy.
In a non-stick pan sauté onion, garlic, chilli and spices with extra virgin olive oil for 4-5 minutes. Add mince and brown for 4-5 minutes. Add corn and tomatoes.
Place the baked sweet potato fries in a lined dish. Spoon the chilli mixture over the fries and top with cheese. Place back in the oven and grill for 3-5 minutes or until the cheese has melted.
