Chocolate and Apple Sauce Brownie
Serves 10-12

Ingredients
85g plain flour
20g cocoa powder
2 tsp baking powder
Pinch of salt
2 eggs
1 tbsp honey or to taste, optional
180g apple sauce or apple puree
160ml cold-pressed apple juice
200g 85% dark chocolate
Extra chocolate or icing of your choice to top
Method
Preheat the oven to 170°C. Line a 20×20 square tin with baking paper.
Sift all of the dry ingredients into a large bowl, combine the dry ingredients and set aside.
Whisk the eggs, and honey (if you are using) until light and pale.
Warm the apple juice in a saucepan. Remove from the heat and gently stir to melt the chocolate, creating a smooth ‘ganache’.
Mix the apple sauce into the eggs. Then add the chocolate mixture and gently fold in the dry ingredients.
Place the batter into the lined tin.
Bake at 170°C for 20 minutes.
Set aside to cool.
Top with some grated chocolate or some chocolate icing to serve.
