Coconut Milk Bircher Muesli
Serves 1
Time 5 minutes plus soaking overnight
Ingredients
¼ cup rolled or steel-cut oats
1 x 65ml coconut milk
½ tbsp almonds or hazelnuts (or any nut), chopped
1 tsp pepitas
1 tsp hemp seeds
1 date, chopped
2 strawberries, sliced
¼ cup blueberries
Water or pineapple juice
Mint, as garnish
Method
In a bowl combine the oats, coconut milk, nuts, seeds, dates and a drizzle of water or pineapple juice. Cover and leave in the fridge overnight to soak.
In the morning stir and top with the berries, then garnish with chopped fresh mint. Eat!
