Ingredients

1 packet qukes 

Dressing

3 cloves garlic, minced

1 small knob of ginger, minced

1 tbsp sugar

2 tbsp black vinegar

2 tbsp crispy chilli oil 

1 red chilli, seeds removed, finely diced

1 bunch coriander, finely chopped

Salt and pepper

Method

Place the quke lengthways. Using a shape knife, carefully cut into the quke straight down for about halfway through. 

Repeat until the whole quke has been sliced finely in this halfway-down cutting. 

Once finished, turn the quke over and finely slice the quke halfway through from a different angle. Ensure the quke has not been cut through. 

Gently pull the quke to show its pattern. Repeat for all qukes and place them onto a serving plate.

Add all of the dressing ingredients to a bowl, mix well until the sugar has dissolved and the ingredients are combined.

Pour the dressing all over the qukes and serve.
