Crumbed Pork Chop

Serves 4

Time 30 minutes

Ingredients

4 pork chops

Handful of parsley, finely chopped

Handful of thyme, finely chopped

Zest of 1 lemon

3 eggs, whisked

¼ cup plain flour

½ cup panko breadcrumbs

2 tbsp poppy seed

2 tbsp sesame seed

Vegetable oil, for shallow frying

Salt and pepper

Method

Preheat oil to 150°C.

Season the pork with parsley, thyme, lemon zest, salt and pepper. 

In a bowl, mix the panko with poppy seeds and sesame seeds.

Crumb each pork chop with plain flour, whisked eggs and breadcrumbs mix.

Shallow fry the pork in oil for 4 to 5 minutes until the surface is golden brown and the pork is cooked through.

Serve with lemon wedges and enjoy.
