Cucumber Soba Noodle Salad with Prawns
Serves 4
Time 10 minutes plus marinading
Ingredients
100-150g prawns
1 packet of gluten-free soba noodles
2 cucumber, julienned – very finely
½ cup spring onion, sliced
Lime wedges, to serve
Prawn Marinade
2 garlic cloves, minced
Extra virgin olive oil
1 tbsp lemon pepper seasoning
Dressing
2 garlic cloves, minced
1 tbsp ginger, minced
2 tbsp black sesame seeds
3 tbsp rice wine vinegar
1 tbsp maple syrup
2 tbsp sesame oil
2 tbsp light soy sauce
½ tsp sriracha
Method
Marinate your protein in the marinade above – simple deliciousness. Leave for 1 hour, if possible, to get the flavour in.
In a bowl combine the ingredients for the dressing and stir to combine.
Cook the soba noodles according to the instructions and drain them. Meanwhile, prepare the cucumber. Toss soba and cucumber together in a bowl and mix with dressing.
Warm a skillet with olive oil and cook the prawn through or to your liking.
Arrange prawn on top.
Top with additional black sesame seeds and spring onion. Serve with lime wedges.
