Curly Fettucine with Creamy Chicken Pesto

Serves 5

Time 15 minutes

Ingredients

500g curly fettucine 

4 tbsp butter

200g chicken breast, diced small

150g pancetta, diced

300mls of cream

Rocket Pesto

1 cup of rocket

1 cup basil

½ cup pine nuts

5 tbsp olive oil

½ cup grated parmesan

Extra olive oil, if required

Salt and pepper

Method

For Pesto, place all ingredients into a food processor and mix until combined.

In a pot of boiling salted water, cook pasta as  per packet directions.

Heat butter in a large pan on medium heat and add chicken, pancetta and cook for 4 minutes or until cooked and golden.

Add pesto and a little pasta water to help stop it from sticking. Pour cream and pesto into pan. Reduce heat to a simmer. Cook for a further 3 minutes.

Add strained pasta to the sauce and toss well to combine.

Serve and enjoy with family and friends!
