Custard Swirl, Chocolate and Walnut Brownies
Serves makes 12 brownies
Time 45 minutes including cooking time
Ingredients
150g soft unsalted butter
150g dark chocolate
3 eggs
1 vanilla bean pod, beans scraped
250g caster sugar
½ cup plain flour
½ tsp salt
1 cup chopped walnuts
1 cup custard + extra to serve
Method
Preheat the oven to 160°C.
Line a 20 cm square baking pan with baking paper. In a saucepan, melt the butter and chocolate together until smooth. Set aside to cool slightly.
In a separate bowl, whisk the eggs, sugar and vanilla together until sugar has dissolved and mixture is light and fluffy.
Add the egg mixture to the chocolate mixture and mix until combined. Add the nuts, flour and salt and mix until smooth.
Scrape brownie mix into baking pan. Pour over the custard and swirl into the brownie mix with a butter knife.
Bake in the oven for approx 25-30 minutes or until just set. I like my brownies nice and fudgey!
Remove from the oven and allow to cool before slicing and serving with a dollop extra custard.
