Egg Free Carrot Cake

Serves make 1 cake

Time 40 minutes

Ingredients

1 cup wholemeal flour

1 cup grated carrot

½ cup castor sugar

2 tbsp brown sugar

1 tsp baking powder

1 tsp baking soda

1 tsp cinnamon powder

¼ cup extra virgin olive oil 

1 cup milk

1 cup chopped walnuts

Frosting

200g cream cheese

1 tbsp butter

2 tbsp powdered sugar

1 tsp vanilla extract

Toasted coconut and chopped walnuts, to garnish 

Method

Preheat oven to 180°C. 

Into a bowl sift the flour, baking powder, baking soda and cinnamon. Add in the milk, sugar, oil and combine. Finally, stir through the carrot and walnuts through the mixture.

Place in a greased oven tin and bake for 30 to 35 minutes.

Meanwhile, prepare the frosting by whisking at high speed the cream cheese and butter together. Then add the sugar and vanilla and beat more slowly. 

When the cake is cooled – spread over the frosting and sprinkle with coconut and walnuts.
