Emergency Chocolate Pudding

Serves 4

Time 1 hour

Ingredients

200g chocolate, melted

125g butter

¼ cup raw sugar

4 eggs

½ tsp salt

1 tsp vanilla bean paste

¼ cup flour 

 

To serve

Whipped cream 

Strawberries 

Mint leaves

Icing sugar, for dusting

Method

Preheat oven to 200C.

Stir butter into melted chocolate, allowing the residual heat to melt the butter.

In a large bowl use a whisk to combine the eggs and sugar. Add salt, vanilla and flour and use the whisk to gently stir through until smooth and combined. 

Pour into a lined cake tin and bake for 15-20 minutes. 

Allow to cool in the tin. Serve on a large plate, top with whipped cream, strawberries, mint leaves and a dusting of icing sugar.
