Fruit Crumble with Vanilla Custard

Serves makes 1 tray

Time 50 minutes

Ingredients

Crumble Mix

150g macadamia, roughly chopped

1 cup brown sugar

2 cup self-raising flour or plain flour

200g butter

500g toasted muesli

Filling

500g frozen pineapple

500g frozen mango

1 cup brown sugar

6 pear, peeled and chopped

¼ cup corn starch

1 punnet strawberries, greens removed, halved 

1 punnet raspberries, cut into half

To Serve

Icing sugar

Vanilla custard

Method

Preheat the oven to 180°C.

For the crumble mix, combine brown sugar, flour and butter in a large bowl. 

Use your fingers to mix together. 

Once the mixture starts crumbling, add the macadamia and muesli and continue mixing for 1-2 minutes.

In another bowl, place all the filling ingredients in and gently mix together. 

Place the filling onto a baking tray and spread evenly. Sprinkle the crumble mixture on top. Ensure the crumble covers up the filling. 

Bake for 35-40 minutes until the top is golden brown.

Sprinkle icing sugar and serve with cold vanilla custard on top.
