Fruit Smoothie Bowl with Homemade Granola and Hemp Seeds

Serves 2-3

Time 20 minutes

Ingredients

2 frozen bananas

1 cup frozen blueberries

½ cup frozen raspberries

½ cup Greek yoghurt

3 tbsp hemp protein powder 

½ cup of milk

2 Medjool dates

 

½ banana thinly sliced

1 cup strawberries quartered

1 cup fresh blueberries

2 tbsp of hemp seeds toasted

 

For the granola:

½ cup rolled oats

¼ cup chopped raw almonds

2 tbsp coconut flakes

2 tbsp pumpkin seeds

½ tsp ground cinnamon

1 tbsp extra virgin olive oil 

1 tbsp honey (or sugar substitute)

Method

Preheat the oven to 180°C and line a tray with baking paper.

In a bowl place the honey, olive oil, cinnamon and mix well – then add oats, pumpkin seeds, almonds, and coconut flakes and ensure the dry ingredients are well coated in the wet mixture

With a spatula spread the granola across the baking paper and place it in the oven for 15 minutes – at this time take the tray out and flip the ingredients slightly- then return to the oven for another 5 minutes to get it crunchy!

In a blender blitz the 2 frozen bananas, frozen blueberries, frozen raspberries, milk, hemp protein powder and dates until completely smooth

Place in a bowl and top the yoghurt smoothie with strips of banana, the granola, blueberries and strawberries so that half the bowl is covered, and half is exposed. Sprinkle toasted hemp seeds over the banana and berries.
