Fruit Spiced Porridge

Serves 2

Time 20 minutes

Ingredients

2 carrots, juiced 

2 apples, juiced

1 orange, juiced

1 nugget fresh turmeric 

1 nugget fresh ginger 

Water if needed

1 cup oats 

400ml coconut milk

½ cup pecans 

1 tbsp maple syrup

1 tsp cinnamon

Method

Juice carrots, 1 apple, orange, turmeric and ginger. 

In a medium saucepan bring the oats and juice to a boil and then reduce to simmer. 

Add chopped apple and coconut milk and cook for 8-10 minutes, stirring often to avoid sticking. If it is getting too thick add a splash of water. 

Sprinkle with orange zest, cinnamon, maple syrup and pecans to serve.
