Garlic Prawn Calzone

Serves 4

Time 2 hours

Ingredients

For the pastry

1 sachet yeast 

2-3 tbsp warm water

½ tsp flour

 

1 ½ cup plain flour 

½ tsp sugar

⅔ cup warm water 

½ tsp salt 

1 tbsp extra virgin olive oil

 

For the filling

5 pieces short cut bacon, sliced

5 prawns

3 tbsp tomato passata

2 cloves garlic, microplaned

3 baby bocconcini, torn

½ red onion, sliced

½ bunch basil, leaves picked 

½ red chilli, thinly sliced

1 cup mozzarella, grated

Method

Preheat the oven to 250C.

In a small bowl combine yeast with 2-3tbsp warm water and ½ tsp flour until it bubbles and becomes foamy. 

In a large bowl combine all of your ingredients for the dough with the yeast mixture, and stir with a wooden spoon until it all comes together. Add a little bit of flour if it’s too sticky. Cover with cling wrap and proof for 1 hour in a warm place.  

On a floured surface, gently stretch the dough, creating a large circle. On one half spread the passata and top with the other filling ingredients. Fold the dough over, enclosing the ingredients. Press firmly to close the edges. Bake in the hot oven for 20-30 minutes or until the pastry is golden brown.
