German Apple Cake

Serves 6

Ingredients

2 cups self raising flour
1 tsp baking powder
1 cup Natvia
2 tsp ground cinnamon
Pinch salt
2 eggs (you can use 3 eggs if your mixture looks a little dry)
1 cup extra virgin olive oil
1 tsp vanilla extract
5 Granny Smith apples, peeled and diced

Method

Preheat oven to 180°C. Grease a 22cm round cake tin.

In a bowl mix the flour, baking powder, natvia, cinnamon and a pinch of salt.

Add the eggs, extra virgin olive oil and vanilla to a food processor and blitz until creamy. Pour in the dry ingredients and blitz again until combined.

Transfer mixture to a bowl and fold through the apples. Pour mixture into lined cake tin and place in the oven to bake for 40-45 minutes.

Serve with cream, if desired.
