Ginger Fried Greens

Time 20 minutes

Ingredients

2 tbsp extra virgin olive oil 

1 tsp sesame oil

1 block firm tofu, cubed

2 garlic cloves, sliced

1 tbsp fresh ginger, microplaned

½ red chilli, sliced 

1 bunch broccolini, chopped 

1 bunch bok choy, chopped

1 bunch pak choy, chopped

3 tbsp light soy sauce

1 tbsp pepitas

1 tbsp sunflower seeds

Method

In a large wok, heat the extra virgin olive oil and sesame oil on medium-high heat. 

Add the tofu to the pan with ginger and garlic and stir through, then add the chilli.

Add greens and stir through with pepitas and sunflower seeds and cook until slightly softened.
