Green Goddess Brown Rice Salad

Serves 4

Time 50 minutes

Ingredients

Salad

2 cups brown rice

2 tbsp hemp seeds 

1 cup broccolini, blanched and diced

½ cup kale, chopped

1 packet baby cucumbers, sliced 

1 cup edamame 

½ avocado, sliced

1 tbsp fresh mint 

½ cup baby bocconcini mozzarella

1 part boiled egg, halved 

 

Dressing

3-3 tbsp coconut milk 

1 tbsp water 

2 tbsp apple cider vinegar

½ avocado

1 tbsp hemp seeds 

¼ cup fresh basil, roughly chopped

1 lemon, juiced

1 clove garlic 

¼ cup hemp oil 

Salt & pepper

Method

In a medium pot cook brown rice for 30-40 minutes or until tender, then drain and cool.

In a large bowl add all salad ingredients. 

In a small blender or food processor blitz all dressing ingredients together. 

Drizzle dressing over salad, and stir through.

Pour the salad onto your serving platter and place eggs on top.
