Ham Lettuce Wrap with Pickled Vegetables

Ingredients

4 large lettuce leaves (such as cos or romaine), washed and dried

4 slices champagne ham

50g mixed pickled vegetables (such as carrot, cucumber, and radish), thinly sliced

4-6 fresh basil or mint leaves

1-2 tbsp cream cheese or hummus, for spreading (optional)

Freshly ground black pepper, to taste

Method

Lay each lettuce leaf flat on a clean surface, and spread a thin layer of cream cheese or hummus if desired. Place a slice of champagne ham on top of each leaf.

Layer the thinly sliced pickled vegetables and fresh basil or mint leaves on top of the ham. Season with a touch of freshly ground black pepper.

Carefully wrap each lettuce leaf tightly around the fillings, securing with a toothpick if needed.
