Kefir Tzatziki

Serves 2

Time 15 minutes

Ingredients

1 cup kefir

½ cucumber, thinly grated or diced

1 garlic clove, microplaned

½ lemon, juiced

2 tbsp extra virgin olive oil

2 tbsp fresh dill

Salt & pepper

Method

Mix all ingredients into a large bowl. If using grated cucumber, ensure the liquid is squeezed out before adding to wet ingredients.

Transfer to the fridge for flavours to develop for an hour before serving.
