Lentil & Grilled Cheese Sandwich

Serves 2

Time 20 minutes

Ingredients

1 cup red lentils already cooked/boiled for 16-18 minutes until soft – NOT mushy 

2 tsp seeded mustard

2 tbsp sauerkraut – from a jar

2 pieces bread – wholegrain/wholemeal

2 slices swiss cheese

Method

In a bowl combine the lentils with mustard and a pinch of salt and pepper. 

With a fork combine and mash slightly so a rough paste forms. 

Grab the two pieces of bread and spread the lentil mixture over both, place sauerkraut on top of one and then a slice of cheese. 

Place in a grill toaster for 5-6 minutes or until the cheese melts.
