Loaded Fries

Ingredients

4 large Russet potatoes (about 1.6kg)

3 tbsp extra virgin olive oil

125g chorizo 

Salt & pepper

 

Dip 

200g pickled cucumbers 

100g whole jarred mushrooms 

100g sundried tomatoes

1 block cream cheese 

1 bunch coriander

2 spring onions 

 

Salsa

2 spring onions, sliced

1 cucumber, diced 

1 tomato, diced

1 avocado, skin removed, diced

1 lemon, juice 

1 lime, juice 

2 jalapenos, seeds removed and diced   

1 bunch coriander, finely chopped 

Salt & pepper

2 tbsp extra virgin olive oil

Method

Preheat the oven to 200°C. 

Slice potatoes and chorizo into log chip pieces. Place on a lined baking tray, drizzle with extra virgin olive oil and season with salt and pepper. Bake for 15-20 minutes or until crispy and golden brown. 

Combine ingredients for the dip in a food processor until smooth. 

In a bowl, combine all ingredients for the salsa. 

In a large bowl, top chips with salsa and serve with the dip.
