Mango Smoothie Bowl with Prebiotic Granola

Ingredients

¼ - ⅓ cup coconut milk or yoghurt 

1 cup (160g) frozen mango pieces

1 medium (125g) frozen banana, chopped

¼ tsp ground turmeric

¼ tsp ground cinnamon

¼ tsp vanilla extract 

1 medium (25g) frozen cauliflower floret, optional 

1 tbsp (20g) frozen or fresh avocado flesh

Paleo prebiotic granola, to serve

Method

Place coconut milk or yoghurt into the blender first (the liquid near to the blade assists blending). Add frozen mango and banana, turmeric, cinnamon, vanilla, frozen cauliflower and frozen avocado and blend until a gelato consistency occurs. 

Spoon into a coconut bowl, top an extra scoop of coconut yoghurt, followed by granola and enjoy.
