Masala Omelette Muffin

Ingredients
6 eggs, beaten
1 tsp ground cumin
½ tsp garam masala
1 tbsp sour cream
Salt and pepper
1 tomato, diced
½ brown onion, diced
2 tbsp coriander, chopped
3 cloves garlic, grated
2 tsp ginger, grated
Method
Preheat oven to 180°C. Grease a 6-hole muffin tin with olive oil.
In a bowl, whisk together eggs, cumin, garam masala, sour cream and salt and pepper to taste.
In a separate bowl combine tomato, onion, coriander, garlic, and ginger. Divide the mixture between the 6 muffin holes. Pour the egg mixture over the top.
Bake for 15-20 minutes or until set. Serve hot or cold with sour cream, if desired.
