Mediterranean Corn Snack

Time 5 minutes

Ingredients

1 corn thin 

½ tomato, diced 

3 anchovies

3 Kalamata olives, sliced

½ tsp capers 

1 egg, hard-boiled  

Extra virgin olive oil

Method

Top the corn thin with tomatoes, anchovies, olives and capers. Top with an egg with a drizzle of olive oil and a good pinch of cracked black pepper to serve.
