Mexican Inspired Haloumi Burger
Serves makes 4 burgers

Ingredients
2 avocado
1 lime
4 tbsp finely chopped red onion
¼ bunch fresh coriander, leaves picked, stalks finely chopped
2 tomatoes, sliced 5 mm thick
Pinch chilli flakes
4 soft wholemeal burger buns or rolls, sliced in half
2 tsp smoky paprika
1 tsp ground cumin
350-400g haloumi
Extra virgin olive oil for grilling
¼ Ice berg lettuce, shredded
4 pieces roasted red capsicum
Tabasco sauce
Method
Make the burger condiments first. Scoop avocado flesh into a bowl, add juice of the lime, season with salt and pepper and mash to make a guacamole.
Add red onion, chopped coriander stalks and sliced tomatoes (with a pinch of chilli flakes if desired) to another bowl and gently toss to coat the tomatoes.
Heat a fry pan or grill plate on medium-high heat. Place burger buns cut side down to toast for a few minutes, then set aside. Mix together smoky paprika and cumin in a bowl.
Slice haloumi into 4 juicy pieces and sprinkle one side of each with the spice blend. Drizzle extra virgin olive oil onto the grill plate and place the haloumi with the plain side down first to cook for 2-3 minutes, then flip and cook the spice side for 1-2 minutes or until the haloumi is soft to touch but lightly golden on the outside.
Make the burgers by placing the roasted red capsicum pieces on the bun first, followed by the tomato, onion and coriander mix, shredded lettuce, haloumi, a good kick of tabasco, guacamole and finishing with some coriander leaves - tuck in!
