Minicaps Roasted in Balsamic Vinegar

Serves 6-8

Time 20 minutes

Ingredients

2 packets of mixed baby capsicums

1 tsp salt

¼ cup extra virgin olive oil 

3 tbsp balsamic vinegar 

Pepper, to taste

Goat’s cheese, for serving

Method

Heat the oven to 200°C.

Place the mini capsicums in a tray and pour over the olive oil, balsamic vinegar, salt, and pepper and ensure everything well combined and mini capsicums are well coated.

Bake for 15-18 minutes, until the mini caps are blistered and collapsed. 

Remove from the heat when done, break up goat’s cheese and dollop in between the mini capsicums.

Serve immediately with bread.
