Miso Glazed Salmon with a Parcel of Broccolini
Serves 2
Time 40 minutes
Ingredients
2 salmon fillets – without skin
1 tbsp white miso
1 tbsp rice vinegar
2cm piece ginger crushed + 4 thin slices of additional ginger
1 garlic clove crushed
100mL of water
2 thinly sliced spring onions
1 lemon sliced thinly into rounds – no more than 1cm thick, thin!
2 bunches broccolini
1 tbsp extra virgin olive oil
Salt & pepper, to season
Method
Preheat the oven to 200 degrees.
Cut baking paper into 2 squares and place lemon slices in the middle with thin ginger slices on top as the bed for the vegetables.
Next place broccolini divided between the squares.
Sprinkle with olive oil, salt, and pepper.
Bring opposite sides of the square together and fold them down so that you create a seal and place these parcels on a baking tray.
Place the parcels in the oven and roast for 15 minutes.
Meanwhile prepare the sauce for the salmon by combining the white miso, rice vinegar, crushed ginger, and garlic in a bowl with water.
Once the parcels are done remove them from the oven, set them aside, and do not open them immediately.
Now change the oven setting to conventional and set at 180 degrees.
Lightly season the salmon fillets with salt and pepper.
Heat a non-stick oven proof fry pan and place the salmon piece in once the oil is hot, cook for 2 minutes then turn and remove from the heat.
Pour the sauce over the salmon.
Place the salmon under the grill for 2-3 minutes so that the sauce is slightly bubbly.
Once the salmon is done, place on top of the broccolini bed and top with spring onion. Be careful of steam in the broccolini parcels.
