Mixed Berry Cobbler

Serves 6

Time 50 minutes

Ingredients

400g frozen or fresh strawberries

400g frozen or fresh blueberries

400g mixed berries

Juice of 1 lemon

2 tbsp cornflour

½ cup icing sugar

250g unsalted butter, cut into pieces, room temperature

1½ cups brown sugar

2 tsp vanilla essence

1 tsp baking powder

2 cups plain flour

Cream, to serve

Mint, to garnish

Icing sugar, to garnish

Method

Preheat oven to 190°C. Rub butter around a baking dish.

Add all frozen berries, lemon juice, cornflour, and icing sugar in a large bowl. Mix to combine and set aside. 

In a food processor, add the butter, brown sugar, vanilla, baking powder and flour and blend until it’s a crumbly dough. 

Pour the berries into the baking dish, then sprinkle the dough crumbles over the top until the berries are mostly covered.

Bake for 30 minutes or until it’s golden brown.

Garnish with mint and icing sugar and serve with cream.
