Mixed Berry Fritters

Serves 4-6

Time 20 minutes

Ingredients

2 cups self-raising flour

½ cup brown sugar

2 tsp baking powder

pinch cinnamon

2 eggs

¾ cup milk, room temperature

1 tsp vanilla bean paste 

¼ cup unsalted butter, melted

1 punnet blueberries

1 punnet raspberries

½ punnet strawberries, chopped 

 

½ cup vegetable oil, for frying

 

Vanilla Glaze

1 cup icing sugar

½ tsp vanilla bean paste

¼ cup water

 

To serve

Icing sugar

1 sprig mint

Method

In a large bowl mix together the self-raising flour, sugar, baking powder, cinnamon, eggs, milk, vanilla and butter until it comes together as a smooth batter. 

Gently fold in the berries, and avoid breaking them up too much. 

Heat oil in a large frypan, drop a small amount of batter into the oil to check it is hot enough to fry. Fry for 3-4 minutes on each side or until the batter is cooked and the fritters are golden brown. 

While the fritters are frying, make the glaze by whisking together icing sugar, vanilla and water until smooth. 

Transfer the fritters to a wire rack to drain.   

Drizzle over spoonfuls of the vanilla glaze, dust with icing sugar and garnish with a sprig of mint.
