Mortadella, Red Pepper, Bocconcini, & Olive Panini

Ingredients
4 slices white bread, thick slice
200g mortadella
1 tbsp butter
2 roasted red peppers
¼ cup olives
1 bunch basil
handful rocket
100g bocconcini
¼ cup pesto
cracked black pepper
Method
Butter one side of the slices of bread.
Spread pesto on one side of two pieces of bread, layer on mortadella, roasted red peppers, olives, basil leaves, rocket, bocconcini and black pepper. Top with the remaining slice of bread with the buttered side out.
Place the toasties on a hot pan and cook until cheese has melted.
