Mozzarella, Jalapeno Fillo Poppers

Serves 6-8

Time 15-20 minutes

Ingredients

3-4 jalapenos, with seeds, sliced

1 large red chill, with seeds, sliced

2 small red chillies, with seeds, sliced

200g salami, diced

1 cup olives, chopped

1 cup fresh mozzarella, grated

6-8 fillo sheets

2 stalks spring onion, chopped on angle

20g butter, melted

1 pinch salt and pepper

Method

Preheat oven to 175°C.

Melt butter. Brush a sheet of fillo with melted butter.

Combine jalapenos, chillies, salami, olives, cheese, spring onion and salt and pepper into a medium to large bowl. Mix through with a wooden spoon.

Place jalapeno mixture in the middle of the fillo and roll. Place in oven and bake until golden.
