Olive & Goats Cheese Frittata

Serves 2

Time 15 minutes

Ingredients

2 tbsp extra virgin olive oil

2 garlic cloves, microplaned

1 bunch broccolini 

5 eggs, beaten

150g goats cheese

1 tbsp fresh parsley, finely chopped

1 tbsp fresh tarragon, finely chopped

Salt & pepper

10 black olives

10 green olives

Method

In a medium frying pan saute garlic and broccolini in extra virgin olive oil. 

In a bowl add beaten eggs, goats cheese, parsley, tarragon, salt and pepper.

Pour egg mixture into a frying pan and cook until set.
