One Pot Rice and Meatballs

Serves 4

Time 45 minutes

Ingredients

For Meatballs

¾ brown onion, diced

1 cup breadcrumbs

1 zucchini, grated, fluid squeezed out

500g pork mince

3 cups passata

3 cups vegetable stock 

2 packets of rice

Flat leaf parsley, chopped

2 garlic cloves, minced

¼ brown onion, diced

1 tsp Worcestershire sauce

1 tsp dried oregano

Extra virgin olive oil 

Salt and pepper

Parmesan cheese, to serve 

Method

To make the meatballs combine the ingredients in a bowl, season with salt and pepper, combine well using your hands and then make into balls.

In a large pot add olive oil then add the meatballs first. Ensure you brown them all over turning often. Once this is done remove from the pan and set aside.

Add onion and garlic to the pot and fry off for 2-3 minutes. Add in passata, oregano, stock, Worcestershire sauce, and season with salt and pepper.

Add in the meatballs and simmer gently for 20 minutes.

Then add rice and summer for another 10 minutes. Stir parsley through.

Serve with parmesan cheese on top.
