Pan Fried Scotch Fillet with Miso Butter

Serves 2-4

Time 30 minutes

Ingredients

600g scotch fillets (2 portions) 

80g white miso

100g unsalted butter, softened 

1 tbsp chives, fresh chopped 

1 sprig thyme 

2 cloves garlic

Salt and pepper

Salad

Rocket, or green of your choice

Juice of ½ lemon

Extra virgin olive oil

Method

For the miso butter, in a mixing bowl whisk through the miso and 80g of butter and then season with the chives, salt and pepper

In a large sauté pan over a medium heat, add your steaks and then season generously on the top side with salt and pepper

Add the thyme, garlic and 20g of butter about 2 minutes before you turn the steak over and baste your meat.

Once you turn over the steak pull continue to baste on a lower heat until you are one temp below your desired temperature. Take off the heat and leave on the side to rest.

Prepare the salad, season well with lemon, olive oil, salt and pepper. 

Carve your beef and plate up.
