Pea & Ham Fritters with Poached Eggs
Serves make 12
Time 30 minutes
Ingredients
3 cups self-raising flour
2 cups milk
6 eggs
Pinch of salt and pepper
2 x 100g packets of champagne ham, diced
2 cups frozen peas, thawed
1 small red onion, diced
½ cup finely chopped chives + extra for garnish
Olive oil spray
¼ cup white vinegar
Method
To make the fritter batter, in a large bowl, place flour, milk, 2 eggs, salt and pepper. Mix until a smooth batter is formed. Add the peas, ham, onion and chives. Stir to combine.
To cook the fritters, heat a large frying pan over medium heat. Spray the pan with olive oil spray. Spoon ¼ cup size scoops of the fritter mix into the pan and cook for a few minutes on either side until cooked and golden. Remove to a plate lined with a paper towel and repeat until all fritters are made.
To poach the eggs, fill a large saucepan with water. Add the vinegar to the water and bring to the boil. One at a time, crack each egg into a small bowl. Using a slotted spoon, create a gentle whirlpool in the pot and slide each egg carefully into the water and cook for a couple of minutes or until cooked to your liking.
To serve, place 3 fritters in a stack on each plate. Top each with a poached egg and garnish with chopped chives and a pinch of salt and pepper.
