Peanut Butter, Pecan and Dark Choc Cookies
Serves makes approx. 20 cookies

Ingredients
2¼ cups plain flour
1 tsp baking powder
½ tsp salt
125g unsalted butter, room temperature
¾ cup white sugar
¾ cup brown sugar
1 tsp vanilla bean paste
½ cup crunchy peanut butter
2 eggs
100g dark chocolate, roughly chopped
1 cup pecan nuts, roughly chopped
Method
Preheat oven to 180°C. Line 3 baking trays with baking paper.
In a separate bowl, beat the butter, white sugar and brown sugar with a mixer until smooth and fluffy. Add the eggs, vanilla and peanut butter and beat until blended.
Add flour, baking powder and salt to a bowl. Mix to combine.
Add flour mixture, dark chocolate and pecan nuts and mix until combined into a cookie dough.
Place heaped tablespoon balls of cookie dough mixture onto the prepared baking trays, leaving a few centimetres in between each.
Bake cookies in the oven for 8-10 minutes or until cooked. You want the cookies to have just lost their shine but not yet starting to brown. Let cookies cool slightly on the trays before moving to cooling racks to cool completely. Enjoy, if you can wait for them to cool down!
