Pinot Noir Poached Pear

Serves 6

Time 30 minutes

Ingredients

6 pears, peeled

3 cups Pinot Noir

3 cups water

¾ cup Natvia

1 tbsp vanilla extract

2 tsps ground cinnamon

1 cinnamon stick

1 pinch allspice

1 pinch fresh nutmeg, microplaned

 

To Serve:

1 scoop gelati, honey ricotta

1 handful of walnuts

Fresh Mint

Method

Peel pears and scoop out core.

In a pan bring all ingredients apart from the pears to a boil.

Reduce to a simmer and add pears, cover with a cartouche, place the lid on and cook for 20-25 minutes, making sure to turn pears occasionally.

Take two ladles of the sauce and transfer into separate pan, cook and allow to thicken.

Remove pears from stove. Set aside.

Remove pear from pot and place onto a plate, pouring over the thickened sauce and serve with a dollop of gelati. Serve.
