Prawn & Tomato Skewers
Serves make 2 burgers
Time 20 minutes
Ingredients
15 prawns, deveined
2 tbsp avocado oil
2 tbsp honey
2 tbsp soy sauce
2 tbsp sriracha sauce
1 punnet cherry tomatoes
Salt and pepper
Salad, to serve
Method
Marinate the prawns in the honey, soy sauce, avocado oil and sriracha sauce – reserve some of this for later to drizzle. Season with salt and pepper.
On pre-soaked skewers (to prevent burning) place alternating prawns and tomato.
Warm a non-stick skillet, add some avocado oil and cook the prawns on both sides aiming for blistered tomatoes too.
Serve the skewers on a bed of salad.
