Prawns & Clams in XO Sauce

Serves 2

Time 15 minutes

Ingredients

4 cloves garlic, crushed and thinly sliced

1 red onion, sliced 

1 stem curry leaves 

1 inch ginger, cut into matchsticks

Extra virgin olive oil

Salt & pepper

Enoki mushrooms

2 tbsp XO sauce

1 tbsp chilli paste 

½ tsp sesame oil

2-3 tbsp light soy sauce

6 prawns 

600g clams 

1 spring onion 

1 bunch garlic chives

1 bunch coriander 

1 bunch pea shoots

Method

Add garlic, onion, curry leaves, ginger and extra virgin olive oil to a hot pan over a medium heat and saute for 2-3 minutes, season with salt and pepper. 

Add mushrooms, xo sauce, chilli, sesame oil and soy. Add prawns and clams, cover with a lid and cook for 3-4 minutes. 

Stir through spring onions, garlic chives, coriander and pea shoots.
