Serves 4

Ingredients

2 packets of microwave Coconut, Chilli & Lemongrass Basmati Rice

1 red capsicum, diced finely

½ red onion, finely diced

1 cup frozen corn, thawed and drained

1 cup canned black beans, rinsed and drained

8 cherry tomatoes, cut into halves

1 cup coriander leaves, chopped

 

Dressing:

⅓ cup lime juice

½ cup extra virgin olive oil 

1 tbsp honey

Method

Prepare packet rice and cool this.

Combine dressing ingredients in a bowl and whisk to combine.

Place rice and all other ingredients in a bowl and stir to combine.

Mix dressing through and top with additional coriander to serve.
